Mark Segal (He,Him), Executive Chef & General Manager, Fold’d Community Diner

Mark Segal is currently the Chef and GM of Fold’d Community Diner in Somersworth, NH. He is concurrently the Chef / Owner of Gravy, LLC in Dover, New Hampshire. Previously he has been the Corporate Chef for Tinios Hospitality (The Galley Hatch in Hampton, NH, Popovers on the Square in Portsmouth and Epping, NH, Grill 28 in Portsmouth, NH, Tinos in Hampton, NH), opening Chef and F&B Consultant for Nikanos in Ogonquit, ME, Executive Chef at Demeters Steakhouse, Executive Chef at the One Hundred Club, Executive Chef at Pesce Blue, the last three all in Portsmouth, NH. Chef Segal grew up in the restaurant business and has been a chef for over 30 years. He has worked in various elements of the industry over the years in both front and back of house. As a child his family owned a live performance theatre seating over 3200 people. This was accompanied by a 250 seat restaurant, as well as various concessions within the grounds. This exposure early on led to an interest in food service which in turn spawned a lifelong career. Chef Segal is a graduate of the Culinary Institute of America and has worked from Boston, MA to Los Angeles, CA with industry leaders such as Lydia Shire, Susan Regis, Mark Peel, Nancy Silverton, Joachim Splichal, Octavio Baccerra, and Suzanne Goin amongst others. These chefs instilled a strong belief in the quality of products used and the sustainability of those products. Chef Segal is a former Board Member for Share Our Strength Seacoast, a former member and co-leader for Chefs Collaborative Seacoast, a nominee and former National Advisory Board Member for Best Chefs in America. He is a three-time nominee for Seacoast Spotlight Best Chef. He has worked with educational organizations such as the University of New Hampshire Hospitality Management Program, the Obama administrations “Let’s Move” initiative, and the New Hampshire Fisheries Dept.. He is driven by a desire to connect the sources of our food with the people who consume that food and to share the knowledge he has been fortunate enough to have had shared with him.
